Ingredients

  • 4 egg yolks
  • 4 tbsp sugar
  • 3.5 dl heavy whipping cream
  • 400 g strawberries
  • Vanilla powder

Instructions

Mix together 4 egg yolks, 1 tsp vanilla powder, and 4 tbsp sugar in a bowl. Bring a pot of water to boil that fits the size of the bowl approximately, and place the bowl on top. This is only to help dissolve the sugar. While continuously whisking the mixture, let it warm up until you feel and see that the sugar has dissolved. Afterward, remove the mixture from the water bath and continue whisking until you get a thick custard. Next, whip the cream to stiff peaks (I use a stand mixer) and carefully fold together the custard and whipped cream with a spatula. Remove the stems and leaves from the strawberries and mash them with a fork or use an immersion blender until you get a strawberry purée. Save some of the strawberries for serving later. Fold the strawberry purée into the custard and whipped cream mixture. Then pour the mixture into an ice cream maker (which also chills the ice cream) and let it do its job for about 1 hour. If you don't have an ice cream maker, you can put the ice cream in a bowl in the freezer. Stir the ice cream mixture every hour until you achieve a firm consistency. Serve in cones or in bowls and top with fresh strawberries.
