- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 pcs carrots, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 red chili, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 can (400 g) chopped tomatoes
- 1 can (400 g) black beans, drained and rinsed
- 1 can (400 g) chickpeas, drained and rinsed
- 250 ml vegetable broth
- 150 g quinoa
- Salt and pepper to taste
- Juice of 1 lime
- Fresh coriander, chopped, for serving
Instructions
Heat the olive oil in a large pot over medium heat. Add the onion and garlic, cooking until the onion is soft.
Add the carrots, bell peppers, and red chili. Continue to cook for 5 minutes until the vegetables are slightly soft.
Add the cumin, paprika, and cayenne pepper. Stir well and let it simmer for a few minutes to release the spices' aroma.
Mix in the chopped tomatoes, black beans, chickpeas, and vegetable broth. Bring to a boil.
Rinse the quinoa thoroughly under cold water and add it to the pot. Let it simmer for about 20 minutes or until the quinoa is tender.
Season with salt, pepper, and lime juice. Adjust the seasoning to taste.
Serve the dish warm, topped with fresh coriander.
