Chorizo Salad with Chickpeas and Feta Cheese

This chorizo salad with chickpeas and feta cheese is a simple and flavorful dish that’s perfect for busy weekdays. The spiced flavor of the chorizo combined with mild chickpeas and creamy feta cheese makes this one of my favorite salads.

The salad can be made in under 30 minutes and with ingredients easily available in most Norwegian grocery stores. It’s also full of protein and health benefits, thanks to the chickpeas. Perfect as a light dinner or lunch.

You can also serve this delightful salad with a side of homemade garlic bread with cheese and herbs for a complete meal.

Chorizo Salad with Chickpeas and Feta Cheese

Ingredients

  • 150 g chorizo
  • 1 can (approx. 400 g) chickpeas
  • 200 g cherry tomatoes
  • 1 red onion
  • 100 g feta cheese
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

1. Start by slicing the chorizo. Cook it in a hot pan until crispy, about 5-6 minutes. Place on kitchen paper to drain excess fat.

2. Rinse the chickpeas well under cold water and let them drain.

3. Cut the cherry tomatoes in half and slice the red onion thinly.

4. Crumble the feta cheese into a large salad bowl. Add the chickpeas, cherry tomatoes, red onion, and the cooked chorizo.

5. Make a simple dressing by mixing olive oil and red wine vinegar. Season with salt and pepper to taste.

6. Pour the dressing over the salad and mix well. Ensure everything is coated with the dressing.

7. Garnish with fresh parsley before serving. Feel free to serve with some homemade garlic bread with cheese and herbs.

Notes

If you prefer a vegetarian version, you can omit the chorizo or replace it with a plant-based alternative.
