A proper cream ice cream with cacao nibs, coffee syrup and chocolate chunks is an incredibly delicious ice cream bursting with flavor. Serve it with a good cup of coffee.
Making homemade ice cream isn’t difficult. It’s also quite quick, and the result is definitely worth it!
Ingredients
- 4 egg yolks
- 4 tbsp sugar
- 3.5 dl heavy cream
- 2 dl coffee
- Vanilla to taste
- Cacao nibs
- Chocolate chunks
Instructions
- Make about 2 dl of coffee. Pour the coffee into a saucepan along with 2 tbsp sugar. Reduce the mixture to about half and set aside to cool.
- To make the ice cream, start by making the ice cream base. Whisk together 4 egg yolks and 2 tbsp sugar over a water bath. This dissolves the sugar and creates a smooth mixture.
- Remove the mixture from the water bath and continue whisking until you get a custard consistency. This ensures the ice cream becomes creamy and airy.
- Whip the cream until stiff peaks form.
- Add a little vanilla to the base, either from a vanilla bean or vanilla powder.
- When the base is ready, fold in the cacao nibs, coffee syrup and finely chopped chocolate chunks (I prefer 70% dark chocolate).
If you have an ice cream maker with a cooling function, pour the base into it and let it chill. If you need to use the freezer, it will take longer (about 4 hours). It's important to stir the ice cream approximately every hour.
