Cream Ice Cream with Cacao Nibs, Coffee Syrup and Chocolate Chunks

A proper cream ice cream with cacao nibs, coffee syrup and chocolate chunks is an incredibly delicious ice cream bursting with flavor. Serve it with a good cup of coffee.

Making homemade ice cream isn’t difficult. It’s also quite quick, and the result is definitely worth it!

Cream Ice Cream with Cacao Nibs, Coffee Syrup and Chocolate Chunks

Ingredients

  • 4 egg yolks
  • 4 tbsp sugar
  • 3.5 dl heavy cream
  • 2 dl coffee
  • Vanilla to taste
  • Cacao nibs
  • Chocolate chunks

Instructions

  • Make about 2 dl of coffee. Pour the coffee into a saucepan along with 2 tbsp sugar. Reduce the mixture to about half and set aside to cool.
  • To make the ice cream, start by making the ice cream base. Whisk together 4 egg yolks and 2 tbsp sugar over a water bath. This dissolves the sugar and creates a smooth mixture.
  • Remove the mixture from the water bath and continue whisking until you get a custard consistency. This ensures the ice cream becomes creamy and airy.
  • Whip the cream until stiff peaks form.
  • Add a little vanilla to the base, either from a vanilla bean or vanilla powder.
  • When the base is ready, fold in the cacao nibs, coffee syrup and finely chopped chocolate chunks (I prefer 70% dark chocolate).

If you have an ice cream maker with a cooling function, pour the base into it and let it chill. If you need to use the freezer, it will take longer (about 4 hours). It's important to stir the ice cream approximately every hour.
