Homemade (and Healthy!) Tacos

Ingredients

  • --- Tortilla Wraps (6 pcs) ---
  • 3.25 dl wheat flour
  • 1.25 dl water
  • 1 tsp baking powder
  • 1 tbsp butter
  • 1 pinch salt
  • --- Tomato Salsa ---
  • 1/2 onion
  • 2 tomatoes
  • 1/2 clove Chinese garlic or less
  • 1 chili or less
  • 1 small piece ginger (thumb-sized)
  • 1 tsp spice blend
  • --- Taco Spice Blend ---
  • Cumin
  • Paprika
  • Chili powder
  • Onion powder
  • Garlic powder
  • Oregano
  • Salt
  • Pepper
  • Sukrin
  • --- Meat Filling ---
  • Ground beef or ground pork
  • 2 tbsp spice blend
  • Onion
  • Garlic
  • --- Toppings ---
  • Jalapeños
  • Sour cream or crème fraîche

Instructions

Start by making the tortillas: Combine all the dry ingredients in a bowl.

Heat the water in a saucepan and add the butter. When the butter has melted, mix this with the dry ingredients and knead into a smooth dough. Let rest for about 15 minutes.

Roll the dough into a log and divide into 6 equal pieces.

Use plenty of flour and roll out the dough as thin as you can.

Cook on fairly high heat in a dry non-stick pan. Flip when you see bubbles starting to form. Don't leave them on too long - otherwise the flatbread becomes a bit dry and difficult to work with later. Keep them in a clean kitchen towel until serving.

Make the salsa: Remove the seeds from the tomatoes to reduce the water content a bit.

Roughly chop the salsa ingredients (onion, tomatoes, garlic, chili, ginger) and blend to salsa consistency with an immersion blender. Mix in a teaspoon of spice blend.

Place the salsa in a fine-mesh strainer over a bowl so the water can drain out (otherwise it becomes very messy when eating).

Make the spice blend: Mix together cumin, paprika, chili powder, onion powder, garlic powder, and oregano. Start with these spices and taste, then add salt, pepper, and Sukrin (you'll need a bit less of these).

Cook the ground beef (or ground pork) with a couple tablespoons of spice blend, onion, and garlic.

Serve with jalapeños and sour cream or crème fraîche.

Notes

Fresh cilantro is great to add to the salsa too! This is a healthier and more budget-friendly version of Friday tacos.
