Homemade Energy Bars, Quick, Affordable and Easy

This is a recipe for energy bars that you can easily make yourself! The ingredients are relatively affordable and you can leave out or add your favorite items from your cupboard. Perfect for people on the go who need extra energy without the time or opportunity to eat a full meal. Also perfect before a workout!

Ingredients

  • 100 g dried cranberries
  • 50 g goji berries
  • 100 g raisins
  • 100 g walnuts
  • 100 g almonds
  • 50 g coconut flakes
  • 100 g dark chocolate
  • 3 tbsp honey
  • 2-3 tbsp water

Instructions

Start by blending all the dry ingredients (including raisins, cranberries, goji berries) except the chocolate in a blender. Process the mixture just long enough so it still has some coarser pieces. If you don't have a blender, you can also chop or crush the ingredients by hand.

Transfer the mixture to a suitable mixing bowl, add honey and chopped chocolate. Add a few tablespoons of water until the mixture becomes sticky when you stir it.

Pour into a loaf pan or similar container that you've lined with parchment paper and press the mixture together firmly into an even layer.

Let it cool in the refrigerator for a little while before cutting into desired portions. Take them with you in a small container and eat right before a workout or when you need an energy boost during the day.

Notes

Tip: Customize the ingredients based on what you have in your cupboard - perfect for using up leftover nuts and dried fruit.
