This is one of the easiest and most popular side dishes you can make for dinner. Homemade garlic bread with melted cheese and fresh herbs is perfect with pasta bolognese, soups, grilled food or just as a little snack. I promise you this will disappear from the plate in seconds!
What makes this garlic bread extra special is the combination of butter, fresh garlic and two types of cheese. The mozzarella gives that lovely stretchy texture, while the parmesan adds a salty, umami-rich flavor. Together with fresh herbs, this becomes something completely different from store-bought garlic bread.
The recipe is incredibly easy and takes just 30 minutes from start to finish until you can enjoy the fresh, warm bread. Perfect when you’re short on time but still want to impress!
Ingredients
- 1 pcs fresh baguette or homemade baguette
- 150 g butter, room temperature
- 4-5 cloves garlic, finely chopped
- 2 tbsp fresh parsley, finely chopped
- 1 tbsp fresh basil, finely chopped (or 1 tsp dried)
- 150 g shredded mozzarella
- 50 g grated parmesan
- 1 tsp salt
- ½ tsp black pepper
- A little flaky salt for topping
Instructions
Preheat the oven to 200°C. Slice the baguette diagonally into pieces about 2-3 cm thick, but don't cut all the way through the bottom. You want the bread to stay connected at the base.
Mix room temperature butter, finely chopped garlic, parsley, basil, salt and pepper in a bowl. Stir well until you have a smooth mixture. This is the magical garlic butter that gives the bread its incredible flavor.
Spread the garlic butter generously between each slice and a bit on top of the bread. Don't be afraid to use plenty of butter – that's where the flavor is! Then wrap the bread in aluminum foil, but leave the top partially open.
Place the bread in the oven and bake for 10 minutes. Take it out, open the foil completely, and distribute the shredded mozzarella and parmesan over the top and down between the slices. Put it back in the oven without foil for 5 minutes until the cheese melts and turns golden.
Remove the bread from the oven and sprinkle with a little flaky salt. Let it rest for 2-3 minutes before serving. Serve warm while the cheese is still melted and delicious!
Notes
Tip: Feel free to use the best homemade baguettes for extra great flavor. You can vary with different herbs like thyme, rosemary or oregano. The bread can be prepared a few hours ahead – spread it with garlic butter and wrap in foil, store in the fridge until you're ready to bake.
