Ingredients
- 4 good quality eggs
- 200 g wheat flour
- 300 g bacon
- 50 g finely grated parmesan
- Pepper
Instructions
Start by making the pasta. Mix 2 eggs and 200 grams of flour. Let the pasta rest for at least 20 minutes.
Cut the bacon into small pieces and fry until crispy.
Make spaghetti with a pasta machine while you boil 3-4 liters of lightly salted water. Grate the parmesan so it's ready for serving.
Whisk 2 whole eggs together, ready for when you assemble the dish.
When the water boils, swirl it around in the pot and add a little olive oil. Then add the pasta and let it cook for about 1-2 minutes.
Drain off almost all the water. Take a large cold bowl and add a little of the pasta water, the pasta, and crispy bacon.
Pour the eggs over and stir together. Serve on a plate with parmesan on top and freshly ground pepper.

This is a classic Italian dish that takes about 30 minutes to make once you've practiced a bit.
