I love making this dessert in the summer when the berries are at their peak. But trust me, you can always swap the berries with whatever you find in the store, and it will still taste heavenly.
If you want to impress your guests, this tart is a sure bet. It’s not as difficult to make as you might think, and the result always looks amazing.
Ingredients
- 200 g all-purpose flour
- 100 g butter
- 50 g powdered sugar
- 1 egg
- 2 lemons, juice and zest
- 150 g sugar
- 3 eggs
- 100 g butter
- Seasonal berries (e.g. raspberries, blueberries)
- 1 tbsp powdered sugar, for garnish
Instructions
1. Preheat the oven to 180°C. Crumble the butter into the flour with your fingers until it resembles sand. Add the powdered sugar and a beaten egg, and knead into a smooth dough.
2. Roll out the dough and place it in a tart pan. Prick the bottom with a fork and pre-bake for 10 minutes.
3. Grate the lemon zest and squeeze the juice. Mix the juice, zest, sugar, and eggs in a saucepan. Heat gently until the sugar has dissolved.
4. Add the butter to the tart filling and stir until it melts and the mixture thickens. This takes about 5-6 minutes.
5. Pour the lemon mixture over the pre-baked tart crust and bake in the oven for about 15 minutes until the filling has set.
6. Let the tart cool before topping it with a selection of seasonal berries. Dust with a little powdered sugar for an extra decorative touch.
Notes
This tart can also be served with a dollop of whipped cream or vanilla ice cream.
