I love this meat-free version of spring rolls with rice paper. They are perfect as a light lunch or appetizer. The delicious combination of fresh vegetables and tofu makes them both healthy and filling.

Ingredients
- 12 pcs rice paper
- --- Filling ---
- 100 g rice noodles
- 1 carrot, julienned
- 1/2 cucumber, julienned
- 1 bell pepper, julienned
- 1 avocado, sliced
- 100 g tofu, julienned
- 1 dl fresh coriander, roughly chopped
- 1 dl fresh mint, roughly chopped
- --- Dipping Sauce ---
- 4 tbsp soy sauce
- 2 tbsp lime juice
- 1 cloves garlic, finely chopped
- 1 tsp honey
- 1 tsp chili flakes
Instructions
Start by cooking the rice noodles according to the package instructions, then rinse them in cold water. Set them aside.
Prepare all the vegetables by cutting them into thin strips, and slice the avocado. Set them aside separately.
To prepare the tofu, cut it into strips and lightly sauté in a pan over medium heat for a couple of minutes. Then let it cool.
Fill a bowl with warm water, and dip each rice paper one at a time until soft, about 10-15 seconds. Lay it flat on a clean surface.
Place a small amount of rice noodles, vegetables, tofu, coriander, and mint on the lower third of the rice paper. Fold in the sides, and roll tightly from the bottom. Repeat with the remaining ingredients.
Mix all the ingredients for the dipping sauce in a bowl, and stir well.
Serve the spring rolls with the homemade dipping sauce on the side. Enjoy them fresh!

Tip: For a spicy kick, add a sprinkle of chili flakes in the spring roll filling.
