Oven-baked cod with herb crust is one of my favorites when I want something light and flavorful for dinner. The herb mixture becomes crispy and gives the fish a delightful taste!
Pairing it with a creamy pea purée completes the dish. Are you ready for a Norwegian dinner adventure?
The dish is also simple to make, and you don’t need to be a master chef to prepare this tasty fish dinner.
Ingredients
- 600 g cod fillet
- 1 tbsp olive oil
- 100 g breadcrumbs
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- 2 tbsp butter, melted
- Salt and pepper
- 200 g peas
- 1 dl milk
- 1 tbsp butter
- Salt and pepper
Instructions
1. Preheat the oven to 200°C. Place the cod fillets in a greased baking dish and brush them with olive oil. Sprinkle with a little salt and pepper.
2. In a bowl, mix the breadcrumbs, thyme, parsley, dill, and the melted butter. Spread the mixture evenly over the cod.
3. Bake the cod in the oven for about 20-25 minutes, until it is cooked through and the crust is golden and crispy.
4. While the cod is baking, boil the peas in lightly salted water for about 5 minutes. Drain the water.
5. Put the cooked peas, milk, and butter in a blender and blend until you have a smooth purée. Season with salt and pepper to taste.
6. Serve the oven-baked cod with herb crust along with the pea purée for a tasty and healthy meal!
Notes
