Ingredients
- 25 g toasted pine nuts
- 2 generous handfuls basil leaves
- 1 large clove garlic
- Olive oil
- 50 g grated parmesan
- Salt (may not be needed due to the parmesan)
Instructions
Add all ingredients except olive oil to a measuring jug.
Pour a little olive oil over and blend in short bursts with an immersion blender.
Gradually add more olive oil until desired consistency.
Taste and adjust with salt or more parmesan if needed.
Notes
Buy basil plants and repot them in larger pots - water in the saucer, keep out of direct sunlight, and pinch off leaves for continuous growth.
