Ever since I watched Lars Barmen make pizza for hungry Oslo students when I myself was a hungry student in Trondheim in the early 2000s, I’ve been making a lot of pizza. Pizza dough is simple to make, but at the same time there are thousands of different variations: sourdough, long fermentation, pre-ferment, with dry yeast, fresh yeast. The list goes on.
Today I’m going to give you a super trick. If you’re a student on a tight budget or making food for the family and short on time. The trick is simply par-baking pizza bases, so you can freeze them and be ready with absolutely delicious pizza in a snap. When you think about it, it makes sense that this works. When you buy frozen pizza, the base is also just par-baked.
This is the simplest pizza dough recipe I know. We’ll save the fancier ones for later. Here the point is large volume and simplicity. As with all yeast baking, you need to set aside an hour for rising.
What you learn over time is to feel your way a bit regarding which consistency works best for the dough. It should be a bit sticky but not gooey. The recipe can be scaled up indefinitely, but this particular recipe makes about 10 par-baked bases of 180 g each.
Ingredients
- 1 kg all-purpose flour
- 680 g water
- 1 packet dry yeast
- 12 g salt
- 2 tbsp olive oil
Instructions
Mix together all the dry ingredients and add the olive oil. Preferably use a stand mixer, then add water little by little. Let the dough rise for 1 hour. Then divide into 10 equal portions (ideally use a kitchen scale and measure out 180 g per portion). The oven should be set to maximum temperature, preferably convection. Use a rolling pin and roll out the pizza dough into a round, nice pizza shape. Bake for a few minutes until the dough gets a slightly brown color around the edges. Repeat until all the bases are baked. These should cool on a wire rack. When the bases are completely cooled, place them in a plastic bag and freeze them. When you want to use them, just take out the bases you need and add whatever toppings you like!
