Ingredients
- Pizza dough (see link in recipe)
- 1 sprig rosemary
- 3 cloves garlic
- 4 figs, each cut into 6 pieces
- 100 g gorgonzola cheese
- 120 g parmesan
- 100 g arugula
- A little dried oregano
- 6 onions, thinly sliced
- 60 ml balsamic vinegar
- 100 ml extra virgin olive oil
- 55 g brown sugar
Instructions
Make pizza dough in the usual way and let rise in a warm place. Divide into two equal portions after one hour and let rest for 30 minutes before rolling out or pressing onto parchment paper. Pre-bake at 240°C convection / maximum heat for 5-6 minutes before adding toppings.
Heat 100 ml olive oil over low heat, add garlic and rosemary, let steep for about ten minutes and remove from heat for later use.
Cut 6 onions into very thin slices, heat a little olive oil in a pan and fry over relatively high heat for about 10 minutes until the onions begin to color. Add the sugar and reduce the heat. Cook for about 30 minutes. It's done when the onions are brown. Season with balsamic vinegar and salt.
Brush the rosemary and garlic oil on the base(s) and distribute the onions, add gorgonzola cheese and place in the oven for about 5-10 minutes or until you see the crust beginning to brown at the edges and the cheese is melted. Top with arugula and parmesan and serve.
Notes
Tip: Think outside the box with pizza toppings! Fig and blue cheese is a flavorful combination that works wonderfully.
