Ingredients
- 1 bag mixed salad greens
- 2 beets (fist-sized)
- 1 block feta cheese
- 1 handful walnuts
- Cherry tomatoes
- 1/2 cucumber
- Salt
- Pepper
- Olive oil
- Parsley
Instructions
Scrub the beets and place in boiling water. Let boil for up to an hour, or until tender.
Put salad greens in a bowl, cut cherry tomatoes in half, peel the skin off half a cucumber, cut in half and remove the seeds with a spoon. Slice into pieces.
Crumble the feta cheese into suitable pieces and sprinkle walnuts over.
When the beets are tender, rinse in cold water and peel them with a knife, cut off the top and bottom. Then cut into desired pieces and arrange on a plate.
Season lightly with salt, pepper and a little olive oil and serve with the salad and any desired sides.
Notes
Freshly cooked beets taste much better than pre-cooked ones. Can be served with french fries and aioli for a more filling dinner.
