Ingredients
- 60 g cooked brown lentils
- 1/4 package baby leaf salad (or other type of lettuce)
- 6 cherry tomatoes
- 6 pieces marinated feta cheese from jar
- 1/2 avocado cut into pieces
- Cucumber
- 1 small chicken breast
- Chicken seasoning (or spices of your choice)
Instructions
Start by preheating the oven to 200°C.
Rinse the lentils well in cold water, then bring to a boil over high heat. Reduce to low heat and simmer with the lid on for 20-25 minutes.
When the oven is hot, bake the chicken seasoned with chicken spices for 20 minutes in the middle of the oven.
Mix the salad together. When the chicken and lentils are done, let them cool and cut the chicken into pieces.
Consider getting a lunch box with several small compartments so you can keep the lentils, chicken and salad in separate sections.
Notes
Tip: Keep the cherry tomatoes whole so the salad doesn't get soggy from tomato juice, and keep the pit in the avocado while it's in the lunch box to prevent it from browning.
