Ingredients
- 8 pcs carrots
- 1 pcs large onion, roughly chopped
- 4 cloves garlic
- 1 pcs chili, roughly chopped
- Thumb-sized piece of ginger, peeled and roughly chopped
- Butter for frying
- 1 l vegetable stock
- 3 dl heavy cream
- Juice of 1 pcs lime
- Salt and pepper
- Fresh cilantro for serving
Instructions
Heat a large pot with butter. Roughly chop the carrots, onion, garlic, ginger, and chili, add to the pot, and sauté for a few minutes.
Pour in the vegetable stock and simmer until the carrots are tender.
Blend the soup until completely smooth using an immersion blender or regular blender.
Stir in the heavy cream and lime juice. Season with salt and pepper to taste.
Serve with fresh cilantro and good bread on the side!
